Coconut candy - Kòk Graje

Recipe KOK GRAJE (from A Taste of Haiti; Mirta Yurnet-Thomas)

2 cups packed light brown sugar
2 cinnamon sticks
1 teaspoon grated ginger
1 teaspoon grated nutmeg
1/2 teaspoon vanilla extract
2 cups grated coconut
1 teaspoon lime juice

In a saucepan combine brown sugar and 1/2 cup of water, cinnamon, ginger, nutmeg, and vanilla extract. Simmer gently until mixture forms thick syrup. When the syrup is very thick, remove the saucepan from the heat. Immediately mix the coconut and lime juice into the syrup. Mix until all the liquid has disappeared. Spread to cool on parchment paper or a wet cutting board.

Nekita, you asked for it! Here it is. Sorry I could not find one for you as soon as you "fini graje kòk la". I hope your coconut did not go to waste. But instead of asking me personally, you should have asked the entire Ann Pale community. There's got to be something that they are good for. :-)
