Tutti-Frutti Barbancourt

Tutti-Frutti Barbancourt
Culinary Arts Institute

2 quarts strawberries
1 quart honey
4 cinnamon sticks
32 whole cloves
1/4 cup grated orange peel
1/4 cup grated lime peel
Mangoes, peeled and cut in pieces
Bananas, sliced
Pineapple, cubed
Barbancort rum

1. Cook strawberries in honey and enough water to cover over low heat 5 minutes. Skim thoroughly, spoon an equal amount into each of four 2-quart wide-mouthed Mason jars. Put into each jar 1 cinnamon stick, 8 cloves, and 1 tablespoon each orange and lime peel. When cool, fill jars with desired amount of remaining fruit and rum. Stir, cover tightly, and refrigerate 3 months.

2. Serve tutti-frutti over ice cream or plain, with cookies.
