1 1/2 cups all-purpose flour
1/4 teaspoon salt
1/3 cup peanut oil
2 tablespoons ice-cold water
1 jar pickled oysters
Milk for brushing
Peanut oil for deep frying, heated to 365°F
1. For pastry, combine flour and salt in a bowl. Mix in oil and ice-cold water. Gather dough into a ball and roll out very thin between two sheets of waxed paper. Cut out 3-inch rounds with cookie cutter or inverted glass.
2. Slightly off center on round, place 3 oysters. Fold in half, coming to within 1/4 inch of the opposite edge. Moisten rim with a pastry brush dipped in milk. Fold rim back over itself to seal.
3. Fry in heated fat until golden. Drain on absorbent paper.
Note: Aquin is a small town in the south of Haiti renowned for its mangrove oysters.
