Russian or Three Color Salad

Salade russe

4 large potatoes
4 medium beets
4 medium carrots
1 cup sweet peas (optional)
1 large onion
1 tbsp. olive oil
1 tbls. apple cider vinegar
2 tsp. mustard (optional)
1/2 cup Hellman's Mayonnaise


In separate pots boil the potatoes, beets and carrots. Do not overcook. Cube vegetables, then mix togetter with a vinaigrette cubed onions and sweet peas, or if you prefer to use the mayonnaise instead. Refrigerate before serving. Serve on a bed of lettuce with sliced hard boiled eggs.
