Heart of palm-salad

Salade de Coeur de Chou-palmiste

1 poung heart of palm
1 tsp. lemon juice
2 tsp. salt
2 tblsp. olive oil
2 mince shallots
2 mince clove of garlic
Salt and pepper to taste

In salted water, cook heart of palm for fifteen minutes or until tender. CUt finely or mash. Add olive oil, shallots, garlic, salt and pepper. Mix together. Serve hot or cold.
